Clotted cream is a British delicacy made when fresh heavy cream is heated indirectly and slowly—either with steam heat or in a water bath. The result is an incredibly thick, decadent spread that is velvety and smooth. During traditional English teas, clotted cream is served with scones, but it makes an incredible, melt-in-your-mouth accompaniment on biscuits, too. 

We make our clotted cream with a double boiler, but if you don’t have one you can achieve tasty results using a heatproof bowl over a saucepan of hot water. The trick here is to take your time: the smoothest, richest texture comes from moist heat that indirectly cooks the cream low and slow.
